Chicken + Beef = Beefken
This recipe is a simple combining of the ground beef and poached chicken recipes. Combine them pound for pound, e.g. 1 lb beef and 1lb chicken. The following steps will describe how I like to do this. I am able to fit at most 3 lbs of beef and 3 lbs of chicken in my 5 qt kitchen aid:
- Make ground beef recipe, and set aside the beef in a bowl.
- Use the same pan used for the ground beef to make the poached chicken.
- Once the chicken is done, shred it using a kitchen aid mixer or equivalent, and add salt, garlic, etc as described in the final step of the recipe.
- Once chicken is thoroughly shredded, add the beef to the kitchen aid, and let it mix that in as well, on the lowest setting.
- The beefken is now assembled, but for some reason it doesn’t seem to develop that special beefken flavor until it has spent a night in the fridge, so it tastes better the 2nd day than the first day, so it’s a bit ideal to make it the day before you plan on using it.
- Store in the fridge or freezer.
