This is a dream-come-true recipe for whole grain Einkorn cookies made using maple syrup instead of processed sugar and carob chips instead of chocolate chips. Link to the semi-sweet carob chips I use (sweetened with coconut sugar). These carob chips are expensive to ship during summer months, as they ice an pack to not melt in the mail.
Set oven to preheat to 350°.
Put the softened butter, maple syrup, and egg into a bowl that you'll use for mixing.
Grind the Einkorn grain and pour the flour on top of the other ingredients in the bowl.
Add the baking soda, baking powder, and salt onto the flour in the bowl. Then shake the bowl or otherwise cause the dry ingredients to mix into the flour.
Mix all the ingredients thoroughly.
Pour the carob chips into the bowl and mix them in with a spoon.
Drop the cookie dough (which should be more like a batter) by tablespoon onto a baking sheet.
Bake at 350° for 9-10 minutes. Remove cookies from sheet after baking using a spatula, and place onto a cooling rack.
