One serving = One 8" tortilla
Dry
1cupeinkorn grain (each 1/4 c. makes one 8" tortilla)
1tspsalt.
Wet
½cupwarm water
2tbspoil (and a little more for handling)
Making the dough

Grind the einkorn grain into flour

Mix the flour and the salt in a container

Add in the oil and water

Mix the ingredients into dough

Add a bit more oil (1 tsp is sufficient for 1/2 c. einkorn grain used) to the container and lightly mix it in
Shaping the tortillas

Add a little oil to your hands and pick up the dough, working it in your hands a little

Divide the dough into dough balls (1 dough ball per 1/4 c. einkorn grain used)
Cooking the tortillas

Get a griddle or pan large enough to fit the tortillas, heat it up on medium or medium-low heat

Using a tortilla press or a rolling pin, flatten one dough ball into an 8 inch tortilla (If the dough is getting pressed beyond 8 inches width then you may be pressing it too hard)

Add the flattened tortilla to the heated griddle or pan, let it cook for a minute or so and then flip it.

Continue on to cooking the rest of the tortillas. (Using multiple griddles/burners is recommended).
Once each is cooked, put them in a pile and cover the pile with a clean cloth or other other means in order to trap the heat.
