Set a pan on the stove on low heat, with the lid nearby.
Add the chicken to the pan and then set heat to Medium High.
After about 1 min. of cooking, flip each piece of chicken.
Put the lid on the pan and set the heat to Very Low.
After 10 min. of cooking on Very Low, turn off the heat. Do not remove lid.
(For every pound over 1 pound of chicken, these `10 min.` times may need to be increased 1-2 min.)
After 10 min. of cooking with no heat, remove the lid and inspect the thickest piece of chicken to see if it is cooked.
If it is not done yet then set the heat back on Very Low and put the lid back on for a few minutes. Repeat cycle and take notes as needed to make adjustments to this recipe for the future.
