With one batch of the Einkorn Dough prepared (from 3 cups of grain), any of the following pizza quantities are recommended:
- 8 Personal Pizzas (6 inch)
- 4 Small Pizzas (8 inch)
- 2 Medium Pizzas
- 1 Large Pizza
Prepare the Einkorn Dough (Base Ingredients) in a bread machine (using "LEAVEN" setting) or kitchen mixer.
Place the dough on a sheet of parchment paper and flatten the dough into a circle larger than the pizza pan.
Put some oil underneath the pizza dough so that the bottom doesn't bake too hard.
Place the parchment paper (with the dough on it) in the pizza pan. It should be larger than pan. Curl it up along the edge in order to create a crust, and so that the dough fits inside the pan.
Add a good amount of Garlic Cream Sauce for the dough. (Better to put too much than too little).
Add the Beefken and any other toppings. These will go underneath the cheese.
Add your preferred pizza cheese.
Add some oregano sprinkled on top of the pizza.
If the yeast was added to the dough less than an hour ago, it is advised to give it a total time of 1-2 hours for the dough to leaven.
To freeze the pizza for later:
Wrap the pizza in the parchment paper and/or place an additional sheet on top of the pizza. Put the pizza into a vacuum sealing bag and put a cardboard (or equivalent) circle the same size as the pizza underneath the pizza in the vacuum sealing bag. Close the bag, vacuum seal it, and place it in the freezer. Later when you take the pizza out to bake, keep the cardboard circle for future use.
To eat now:
Bake the pizza in the oven on the center rack at 375° for 18-25 minutes or until the cheese on the top looks good. Be sure to check on it, and be prepared to adjust the temperature or timing according to your oven and preference.
